I'm not a fancy cook, by any means, and like to make simple dishes. My kids absolutely love that cause at their dad's they are always getting new, wierd stuff to try and aren't also so kean on it

Pork Cutlets with cream of mushroom soup ( Huge hit with my son who is a picky eater when it comes to most meat)
I just take a couple packages of Pork Cutlets
Image Here Cook in a fry pan on both sides till almost done, Remove from pan and then drain out any greese that there may be, and pour in a can of Cream of mushroom Soup and the milk mix it up and then place the pork cutlets back in and let it cook,
The longer it cooks the more tender the meat will be
also a couple other things I make - For a quick Meal
In the winter my kids love this one it sticks to the ribs :-)
You make mashed Potatoes ( i use instanst because I don't have a electric mixer) when it's done cut up hot dogs and toss in and then add cheese and mix it all together - - - YUMMY
another one of my kids favorites is
Mac and cheese with cut up hot dogs mixed in
it's fast, easy and less dishes to do LOL

CHICKEN PASTA
4 tsp butter
3 lb chicken breast, boiled (save broth)
1 16 oz box of spaghetti, cooked
1 15 oz can crushed tomatoes w/juice or in puree
1 lb Velveeta cheese
1 tsp salt
1 tsp pepper
1 tsp paprika
1 tsp chili powder
2 med. onions, chopped (I use the dried onion flakes)
1-2 green peppers, chopped
1 can cream of mushroom soup
Boil chicken until coooked through and save one cup of the broth to the side.
Cut chicken into edible pieces.
Boil spaghetti in the leftover broth in the pot. NOT THE ONE CUP.
Saute onion and green pepper in the butter until softened.
Add soup, cheese and spices and cook over low heat just until the cheese melts.
In a large casserole dish combine this sauce, chicken, spaghetti and the saved 1 cup of broth.
Bake at 350 for 30 minutes.

Speaking of mushroom soup. I was waiting in line at the store yesterday and this lady was talking about mushroom soup sandwiches.
Apparently she spreads the mushroom soup onto the bread, then adds some cheese and cooks it like you would grilled cheese sandwiches. She said her family just looooooves them!!!

LOL Catherine. That was my thought too. Not sure if I'd be brave enough to try it out. While I love mushroom soup, mixed with bread just isn't my thing.

Spinach Salad:This is one of our favourite salads, kind of like Greek Salad but it doesn't have olives.

Sooooo yummy!

4 cups baby spinach
2 cups chopped cucumber
1 cup chopped tomato
1/3 cup crumbled feta cheese (we use a lot more I think, but we buy the low fat one)
Dressing:1/4 cup red wine vinegar
1/4 cup olive oil
2 tbsp lemon juice
2 tsp sugar
3 garlic cloves (pressed in a garlic press

)
1/2 tsp oregano
dash of salt and pepper
Make the dressing then chop up all the veggies and cheese, toss it together and voila you're done! Super simple and very delicious!

When its hot I make a crunchy salad dont really have measurements I just toss in my favorite crunchy veggies like small bits of califlour, diced celery, diced carrots etc and then add sunflower seeds, raisins, bacon pieces and toss them in whatever your favorite poppyseed dressing is. I sometimes put parmesan cheese on top.

Here's one of Andie's and My favorites....its SOOOOO goood
Cheesy Chicken
3 Washington Fryer Breasts (6 breast halves)
˝ cup flour
1 ˝ teaspoons paprika
1 teaspoon salt
3 Tablespoons butter
1 Tablespoon oil
˝ cup cooking sherry
1 cup chicken broth
1 ˝ teaspoons cornstarch 1 cup cream (I substitute ˝ & ˝ instead)
˝ t. salt
˝ cup Rhine Wine
1 cup grated Swiss cheese
Rinse and pat dry chicken breasts. Split bone and skin them…(I just use frozen skinless chicken breast halves, Thawed or skinless breast fillets)
Mix flour, paprika and salt. Thoroughly coat the chicken with this mixture. Brown in butter and oil. Add sherry and broth. Cover and simmer 30 minutes or until tender. Remove chicken to serving platter. Mix cornstarch with cream and add salt. Stir into pan drippings . Add wine and cook until slightly thickened. Pour over chicken and sprinkle Swiss cheese over top. Cover with foil and let stand until cheese melts
Yields 6 servings.
I usually serve it over rice or egg noodles…Rice is the best!
Here's another one of our favorites...I've been making this recipe since I was a small girl...Its basically fool proof and you can use any kind of fruit
Connie's Cherry CobblerHeat Oven to 350 degreesIn a square or oblong baking dish 9 x 9 or equivalent
Double recipe fit perfectly in a 9 x 13 baking dish
1 cube margarine or butter melted (butter is best)
In separate bowl mix together :
1 cup flour
1/2 cup sugar
2 teaspoons baking powder
3/4 cup milk
Pour batter over butter but DO NOT MIX
Then mix together and spoon gently over batter but do not mix:
1 can red sour pitted cherries
3/4 cup sugar
2 Tablespoons flour
Almond flavoring to taste (about 1 teaspoon)
Cinnamon to taste (about 1 teaspoon)
Bake mixture for 40-50 minutes or until nicely brown
This makes a great dessert that's quick and easy and it has a sauce like juice at the bottom, the cherries are mixed throughout the dough and the dough/cake/cobbler is at the top....MMMMMMMMMMM GOOD

The cherry cobbler sounds yummy.

I was just wondering if a cube of butter is 1/4 cup?

We have a old family recipe like that but it is chocolaty...
Chocolate Fudge Upside-down CakeCream together: 3/4 cup sugar and 2tbsp. butter
Stir in 1/2 cup of milk
Mix together: 1 cup flour, 2 tsp baking powder, 2 tsp cocoa.
Add to creamed mixture and spread into a 9X9 pan
Mix: 1/2 cup white sugar, 1/2 cup brown sugar, 1/3 cup cocoa and sprinkle it over the batter.
Carefully pour 1 1/2 cups boiling water over the top. (I place a spoon under the flow of water so it doesn't dig holes in the batter.

)
Bake at 350 for 35-40 minutes.
Like Connie's cobbler you end up with a yummy chocolate pudding on the bottom and chocolate cake/cobbler on the top.

That actually doesnt sound too bad. I would give it a try for the heck of it. I love mushroom soup and grilled cheese sandwhiches. You think that sounds bad try this one: my friends eats this.. a salted cracker with peanut butter and mayonaise. GROSS!

doesnt sound too appitizing eh? but he says its really really good.

OK Here's another easy and Yummy recipe
I don't know what the name of it really is but its a Fruit Salad
1 large pkg of Instant Vanilla Pudding Mix
1 Medium can of CRUSHED pineapple
1 medium contaniner of Cool Whip
Then add any other fruit you want to it...
We add Banana's, Mandarin Oranges, Coconut , we also added Huckleberries but you could add any kind of berry or grapes etc. Use your imagination
We also put colored miniature marshmellows in it...
Drain the juice from the pineapple into the dry pudding mix and mix it up well. Then add the pineapple and the cool whip, mix it well, We added all the other above ingredients and put it in the fridge for a while to chill and served it with whip cream and topped it off with some more berries....Boy is it a nice dessert that way...YUMMMMMY

Five Minute Pies
1 grammcracker crust
2 boxes jello lemon pudding
1 tub cool whip
Mix up the pudding but leave out just a little of the milk not much
Turn the mixer on high and add 1/2 of the tub of cool whip
poor into pie shell and add the other 1/2 of the cool whip to the top of that
Put it in the frig and let it setup for about an hour
You can make the dream sickle pie by using a package of orange cool aid

Ok guys, here is one of my favorite appetizers ... and it is perfect for bbq's and gatherings! Soooo easy to make:
Hot Artichoke Dip
2 Cups of Mayonnaise
1.25 Cups of Parmesan (I prefer shredded, but grated is fine)
1 14 oz jar or can of Artichoke Hearts
1 tsp Tabasco (Can use any hot sauce and I use a tbsp instead of a tsp because we like it spicy)
1 tsp Worchestershire Sauce (May also use Country Bob's)
In a large bowl mix the mayo, parmesan, tabasco and worchestershire. Slice the artichoke hearts in half long ways and drain well. Fold them into the mixture.
Put in oven safe dish (a pie plate works great) preferably sprayed with non-stick spray for easy clean-up. Bake at 350 degrees F for approximately 30 minutes, or until it bubbles on the top and starts to brown.
Serve immediately with crackers, toast points, pita bread, or tortilla chips.
Enjoy!

ok -I am going to add one that even Sandi can make
take 1 box of angel food cake mix - dump in to 9x13 pan - now take a can of crushed pineapple in juice - dump that in the pan - stir up and bake at temp on box for about 20min-
serve with lowfat coolwhip - it is a super easy,super yummy no fat dessert.

Hi everyone!
Heres a simple yet easy recipe for regular use or you can add "eyes" for a Halloweeny touch!

Cheesy Mummy Rolls
These mummies are filled with Cheddar cheese and sprinkled with a kicked up Parmesan cheese.
Prep time: 10 min / Baking time: 12 Min / 8 cheese Rolls
1 (8 oz) can refrig crescent rolls
2 oz Cheddar cheese. Cut into 8 (2 x 1/2 x 1/2~inch)
sticks
1 egg, slightly beaten
1 tablespoon water
1 tablespoon grated Parmesan cheese
1/4 teaspoon chili powder
16 small ripe olives
Heat oven to 375 degrees. Line baking sheet with parchment paper or spray with no~stick cooking spray.
Unroll dough; seperate intp 8 crescents. Place 1 cheese stick at wide end of crescent. Starting at wide end, roll dough toward point, sealing end well. Tuck ends underneath and press all seams together. Pleace on prepared baking sheet.
Combine beaten egg and water in a small bowl. Combine Parmesan cheese and chili powder in another small bowl.
Brush rolls with egg mixture mixture; sprinkle with Parmesan cheese mixture. Pleace OLIVE peices (chopped small as pic shows) on top for the eyes. Bake for 12 to 14 Min or until golden brown. Sreve warm.

An easy one!
3 lbs boneless pork tenderloin, cut into serving size pieces
1 sm bottle Open Pit (or favorite) BBQ sauce
2 can Apple Pie filling
Put in crock pot on medium for the day ... over 8 hrs and it will fall apart

Easy and probably everyone makes it...lol.
1 lb ground meat
1 can of ranch style beans
1 can of rotel tomato
1 package of Taco Seasoning (I prefer the taco bell seasoning myself)
1 head of lettuce (cut up for a salad)
1 tomato cut in cubes
1 whole medium yellow onion
1/4 cup of fresh cilantro
1 avacado diced
1 bag of Fritos
2 cups of Chedder Cheese Grated
1 small Sour Cream
Salsa
Brown ground meat, cilantro and half the onion until done. Drain grease and add can of rotel tomatoes and a 2 cans of water with taco seasoning pack. Let simmer for about 15 minutes and add can of beans, then allow to simmer until almost dry. Pour Fritos into a zip lock baggie and crush them. Mix all salad ingredients, Lettuce, tomato, onion, avacado, serve onto plates. Put 1/4 of a cup of fritos on top of salad, 1/2 to 3/4 (depending on how much looks yummy) meat/bean mixture, add 1/4 cup of cheese, a dollop of Sour Cream and salsa on top and eat.
Yummy...now i want some Taco Salad...lol.

Another Tex Mex yummy.
2 Large cans of Wolf Brand Chili
1 large Yellow onion (Diced)
package of yello corn tortillas
1 large block of chedder cheese grated.
1/2 cup of butter
Preheat oven to 400
Sautee onions on stove in butter until onions turn clear, remove from heat. Heat up chili and add 2 table spoons of water to it.
In a 13X9 caserole dish pour a thin layer of chili then place a flat row of corn tortillas over the chili, pour another thin layer of chili, sprinkle on some onion sprinkle on a layer of cheese. Then repeat process until all the chili is gone. Heat for about 15 to 20 minutes in the oven and serve with refried beans...yummy.
A hint about refried beans if you don't already know. If you put about a table spoon of bacon grease in a pan and heat up your beans in that they will be super yummy.

Yuck... it was awful. The recipe is flawed, the temp of 180 means is wrong, try maybe 350 or so. Also, too much egg, it ended up more like a frittata or something

For the adventerous
Tumeric Chicken
1 lb Boneless Chicken Breast
2 Garlic Cloves (Chopped fine)
2 tbsp of olive oil
1 tsp of Tumeric
1 tsp of Curry
1 cup chopped white or yellow onion (chopped)
1 inch fresh ginger (shredded, I use a cheese grater to do this)
pinch of white pepper to taste
Chop chicken breast into bite size. Heat olive oil and sautee onion, garlic, ginger for about 2 minutes then add chicken and saute until done. Add tumeric, curry and white pepper with 1 cup of water and simmer for about 15 minutes.
Serve with flat bread or over Jasmine rice. You can also add cauliflower or broccoli to the mixture when you let it simmer for 20 minutes.

Try this one if you can find haloumi cheese its really really good (some specialty stores have it its a cheese that comes from cyprus) if not use feta but no ricotta at all.
I dont really measure but usually I use about 2 pounds of fresh spinach leaves and I trim the stems and throw them away. I cut the spinach up into strips. I cut up about one cup of spring onions. Some ppl like to put dill in theirs but I dont I usually put 1/2 cup chopped fresh parsley and about 1/4 cup corriander leaves (cilantro). Then I toss all of this with about a spoon of sea salt and then put it in a collander and let it set 15 minutes. Press any liquid off it after 15 minutes
I use olive oil and sautee about 2 cups of chopped onion (not the spring onion a different onion lol) until soft then add the spinach mixture and sautee for a few more minutes. You can add some salt and some greek oregano (just a little bit its potent)
When I open the filo package I put a damp paper towel on it so the leaves dont dry out. I have a cup with melted butter and a brush to use to do this next step.
Just brush some butter on the bottom of the pan and then layer the filo brushing lightly each leave with butter as you place them on. I like the filo dough so I layer half the package then add the spinach leave mixture on top. I then add slices of haloumi cheese on top but if you want to use feta put that on top at this time.
Do the rest of the filo dough layers with the butter and then finish it with brushing it with butter on top.
Cut it into triangle pieces before baking.
Bake at 375 degrees for about 20 minutes or until golden brown.

White Chicken Chili
chicken (we usually use
about 2 breasts, diced and cooked)
1 c. onion
4 cloves garlic
1 T. olive oil
2 tsp. ground cumin
1 tsp. oregano
3 cans (15.5 oz) great northern beans
2 (4 oz) cans chopped chilies
4 c. chicken broth
red pepper (flakes or ground) to taste
Simmer all together.?
great topped with sour
cream and cheddar cheese

Casey’s Super Easy Apple Crisp
4 - 6 cooking apples (Granny Smith, Idared, Jonagold, Rome
Beauty are all good choices)
1/2 cup flour
1/2 cup oats
2/3 cup brown sugar
3/4 Tbs cinnamon
3/4 Tbs nutmeg
1/2 cup butter, melted
Preheat oven to 375o.
Cut apples into chunks. Cinnamon/sugar to taste. Put apples into baking dish.
In medium bowl, mix dry ingredients with melted butter. Mix till crumbly.
Top apples with oat/flour mixture.
BAKE 30 min.
**Double topping mixture if you want top and bottom crust and put half oat/flour mix into baking dish before the apples.
(*Casey is my daughter - and she even taught Mom a few tricks!!

People at work LOVE this recipe! - Especially when I bring it in in the morning, fresh from the oven!!)

Egg drop soup
32 oz container chicken broth
1/2 tsp garlic, minced
2 Tbsp vinegar
(white, or rice vinegar if you have it)
2 eggs, beaten
1/2 tsp sesame oil (optional)
1/2 tsp red pepper flaked (optional)
Heat broth, garlic, vinegar , and sesame
oil and red pepper if using, to boiling.
Lower temperature to medium and simmer
15 minutes. Drizzle in beaten eggs while
stirring soup with a fork to create ribbons
of egg. Heat until soup steams again
and serve.

Fantastic Ice Cream Pie!
1 half gal vanilla ice cream
1 Roll of Peanut Butter cookies (dairy case)
1 Jar of Caramel topping (for ice cream)
1. melt ice cream in a large bowl.
2. Bake cookies while ice cream melts. Crumble when cool (do not crush real fine)
3. Put MOST of the crumbled cookies in the bottom of a long (9X13) baking dish. Save some to sprinkle on top.
4. Mix caramel topping in melted ice cream
5. Pour mixture in dish on top of crumbs and sprinkle remaining crumbs on top.
FREEZE for 3 days before eating! It is NOT good the 1st day or the second day!
It goes a long way because it's VERY rich, so a small piece will do, I promise.
Take it out of the freezer maybe 10? minutes before serving and cut in squares (small)
Your company will ask for the recipe.

one of my favorite things in the world to eat is tuna fish prepared with mayo and warm hard boiled eggs, on bread, with cheetos. mmmmm.

i am big on texture, with a strong preference to crunchy foods.
ok, my recipe. the beauty of this one is that you can add or delete anything you want, except the corn lol. i don't measure stuff too much, i prefer to wing it

even my kid eats this one, but leaves the carrots in the bottom of the bowl.
corn chowder
start with a basic roux (equal parts butter and flour, cooked for a minute or 2 to get rid of the raw flour taste). i normally use chicken broth next, one or 2 cans, depending on how big of a pot i want to make. bring to a bubble to thicken. add evap milk (one can milk + one can water), one can cream corn, one can carrots, cooked ground meat, one can kernal corn. simmer on the stove and graze as necessary. i like to add a dollop of sour cream and some grated cheese right when i serve it. yum!

Mexican Lasgana
2 lbs. hamburger
1/2 cup onion
1 cup mayo
1 jar salsa
1 can corn
1 bag corn chips
2 cups shredded cheddar cheese
Sour cream
Brown 2 lbs hamburger with 1/2 cup chopped onion, drain grease, add taco seasoning simmer for five minutes. Remove from heat. Add 1 cup mayo (or salad dressing whichever you prefer). Add 1 jar salsa and 1 can corn (drained). Mix well
In a casserole dish layer
hamburger salsa mix
corn chips
shredded cheddar cheese
hamburger salsa mix
corn chips
shredded cheddar cheese
Bake at 350 for 30 minutes If you like sour cream add that at serving.
Never had anyone turn their nose up at it!

I haven't seen anything for breakfast so I will throw my grandma's casserole (kinda like a savory bread pudding) into the mix...everything is "fly by the night" depending on how big of a dish you are using...so just estimate I haven't had it turn out bad yet!
What you need:
a casserole dish - glass/metal whatever doesn't matter what size
eggs
milk
butter
salt/pepper
sliced deli ham (you could use turkey or pretty much anything else)
sliced white bread (suppose you could use wheat/whole grain)
sliced cheese (I use plain old Kraft slices)
corn flakes
Pick a "container" size of container depends on how much egg mixture/bread you will need
butter the container (grandma always used butter)
put a layer of bread slices (torn up) on bottom of dish (I take crusts off but really doesn't matter)
then alternate a layer of sliced cheese/meat and bread (my grandma was REALLY bad and buttered all the bread too!) until you get to the top (I don't think I have noticed that it matters what you end with)
mix up the eggs as you would scrambled eggs with milk and salt/pepper.
pour over the casserole until everything is soaked - can't tell you how many eggs you will need, depends on the dish.
cover and refrigerate overnight - if it looks dried out at any time just add more egg mixture.
In the morning heat the oven to 325-350 and put the dish in the oven.
Cook until firm - depending on how you like your eggs (like mine kinda soft) and all my casseroles always have a hole in the middle where I have sampled before taking out of the oven.
In the last few minutes of cooking cover the top with the cornflakes and let them brown.
Like i said it is a grandma receipe so no real measurements...that being said it has never been turned down at home or office!

Taco Soup (Must own Beano)
do not drain anything except where indicated
IN crock pot dump in:
4 cans red dark or light kidney beans
2 cans Mexican corn
1 can garbanzo beans
2 cans black beans
2 packages of dry onion soup mix
1 package dry ranch mix
1-2 pounds cooked, crumbled and drain hamburger meat
1-2 depends on preference cans of diced stewed tomatoes
Heat until beans are tender.
Great with shredded cheese on top a bit of sour cream is good too.
Served with cornbread or Frito chips for dipping
Also good to just eat a bowl

Plum cake This is the easiest cake from scratch you will ever make.
2cups flour
2cups sugar
1/4teaspoon salt
1teaspoon ground cloves
1/2teaspoon baking soda
1 teaspoon cinnamon
1cup pecans(opt)
mix all this together then add the wet ingredients
2 lg jars plums baby food
1cup oil
3eggs
1teaspoon red food coloring
mix all together and pour into a bundt pan bake at 300 degrees for 1 hour.
my dad loves this cake. This is my staple at all the bake sales that I bake for.
Sante Fe Stew
2 pound hamburger
1 onion chopped
1bell pepper chopped(opt)
1 pkg Taco mix
1pkg dry hidden valley ranch mix
1 can pinto beans with juice
1can hominy with juice (you can use corn but the hominy is better)
1 can rotel
2 cans stewed tomatoes
1 1/2 cups water
brown meat onions and peppers drain and all other ingredients. let boil and then simmer. Serve with cornbread. This is the only soup that I will eat.

Breakfast wedges
large bag of tater tots thawed
breakfast meat cooked and crumbles
eggs varies
shredded cheese
onion, peppers, optional diced fine
Mash tater tots until crumbly
salt and pepper to taste
garlic powder to taste.
stir in meat, if adding peppers or onions
stir in now. Add enough eggs to make it really wet
add in cheese. Stir well, now add in another egg
Or two. This mix should be wet but not drippy.
Drop large spoonfuls (I mean LARGE!!)
on really warm or hot greased griddle or skillet.
cook well on both sides. it will firm up the more
the egg cooks. too hot they will turn brownish
(not appealing) after they cook thru serve warm

Now don't jump backwards and say UGH!!! This recipe was given to me and I waited 3 years before I finally broke down and tried it. It sounded awful, but once we tried it, we found we'd been missing a totally YUMMY dish all that time! We LOVE this!!!
CORNBREAD SALAD
Hunk of left over cornbread - probably 1/4 of a pan
1 tomato chopped
1 green pepper chopped
1 small onion chopped
6 pieces of bacon...cooked and crumbled
Ranch dressing
Mayonnaise
Crumble cornbread in a large bowl, add all ingredients and stir.
The amount of Eanch and Mayo you use will depend on how moist you will want it. It takes quite a bit.
Add salt and pepper to your taste. REFRIGERATE
DON'T tell anyone what this is. If you do, they won't try iy. If you don't tell, they will want the recipe!!!

lol I am actually pretty brave I'd like to try it...I'm from the south...we tend to eat just about anything!

African Peanut Soup
From Real Simple magazine
This is like a really rich, flavorful
tomato and rice soup.
1 tablespoon peanut oil
1 clove garlic, minced
1 28-ounce can
chopped tomatoes, undrained
1 6-ounce can tomato paste
1/2 cup creamy peanut butter
4 cups chicken broth
1 tablespoon balsamic vinegar
1/4 teaspoon cayenne pepper
2 teaspoons kosher salt
1 cup white rice
6 scallions, chopped
1/4 cup salted peanuts, roughly chopped
In a medium saucepan, over medium heat,
heat the oil and garlic for 1
minute. Add the tomatoes, tomato paste,
peanut butter, broth, vinegar,
cayenne, and salt and whisk to combine.
Bring to a boil. Add the rice,
reduce heat to low, cover, and cook for
20 minutes. Ladle into
individual bowls and garnish with the
scallions and peanuts.
Tip: For a more substantial soup, add
an additional spoonful of cooked
rice to the bowl with the scallions and peanuts.
