Full Version: Sweet Potatoes

We just harvested a ton of sweet potatoes that I planted last spring, and the birds rejected them raw (I would've too laugh.gif ) so we're going to cook some for us to eat and try giving them some of that. Any suggestions for what to do and NOT to do when cooking them?

Just don't add a bunch of the yummy unhealthy stuff that's so good on sweet potatoes (brown sugar, butter, etc). Hmmmmm- now I'm going to have to cook some up for dinner tonight- that made me hungry smile.gif

For the birds, use Majj's potato puffs recipe. For the people, peal and cut them into 1.5 inch chunks and mix with chunks of regular potatoes, onions, parsnips, carrots or other root veggies. Sprinkle liberally with olive oil. Season with salt and pepper and, perhaps, rosemary. Roast in a 400 degree oven until soft and nice and brown on the outside. Really good, healthy, and easy.

Hubby just peeled them and stuck them in the oven to bake like they were regular potatoes and we didn't put a thing on them and they were darned yummy. Clyde went berserko over them. laugh.gif I offered him some on my fork and he wouldn't touch it. Then he moved to my other shoulder (don't ask, I don't know, either! rolleyes.gif ) and I held it up again and off he went, never even raising his little head till it was ALL gone and quite a bit of it was all over his face. laugh.gif Jade took some from Hubby but threw it instead of eating it.
